Agave-based spirits have been gaining in global popularity over the recent years, and there is a new kid on the block: Sotol.

Though actually not from the agave plant at all, but rather the Sotol plant itself, it has a similar yet distinctive taste and is available as Blanco, Reposado, and Añejo.

I discovered The Marfa Spirit Co. (who produce their Sotol in Marfa, Texas in collaboration with Sotol Don Celso in Janos, Mexico) over Christmas in Santa Fe this year and am a big fan of what they are creating.
